Celebrate National Tequila Day With This Pineapple Jalapeño Margarita!
It’s National Tequila Day, ya’ll! We decided to toast this fabulous occasion by whipping up a sweet and spicy cocktail that’s as festive as it is delicious. (I mean come on, it IS served in a pineapple after all. How could that possibly be a bad thing?)
If you don’t have a pineapple, there’s no need to fret. This margarita is just as tasty and refreshing in a rocks glass. Same goes for the jalapeño simple syrup; if you’re not into the heat, you can use plain simple syrup if you like, or substitute agave or maple syrup.
Point is, it’s time for a cocktail. Here’s how it’s done:
2 oz tequila blanco
1 oz POM Hula
1 oz POM Coco
1 oz fresh lime juice
1/2 oz jalapeño simple syrup (see below)
1/2 oz Cointreau
Ingredients for Jalapeño Simple Syrup:
1 cup sugar
1 cup water
2 jalapeños, halved and sliced into 1/4 inch rounds
Place simple syrup ingredients into a small sauce pan and bring to a boil, stirring until sugar is dissolved. Once sugar is dissolved, bring to a simmer for 2 minutes, then turn off the heat. Cool for one hour, strain, and put into a squeeze bottle or mason jar.
To make the cocktail, fill a cocktail shaker with ice. Shake, then serve on the rocks, ideally in a fun tropical vessel like a coconut or pineapple.
